  • 2 cups cooked chicken (diced, shredded, or cubed)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas and carrots)

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Stuffing

  • 1 box (6 oz) stuffing mix (any flavor)
  • 1/2 cup butter (1 stick, melted)
  • 1 cup chicken broth (or as needed)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine cooked chicken, cream of chicken soup, sour cream, cheddar cheese, frozen mixed vegetables, garlic powder, onion powder, dried thyme, salt, and pepper. Stir until well incorporated.
  • Lightly grease a 9x13-inch baking dish with cooking spray or a bit of butter.
  • Pour the chicken mixture into the prepared baking dish and spread it evenly.
  • In a separate bowl, mix the stuffing mix with melted butter. Stir in chicken broth until moistened.

Assembly

  • Evenly distribute the stuffing mixture over the chicken mixture in the baking dish.

Cooking

  • Bake in the preheated oven for 30 minutes, or until the top is golden brown and crispy.
  • Remove from the oven and let it cool for about 5 minutes before serving.

Notes

Use rotisserie chicken for quicker prep. Personalize with your favorite vegetables or cheese varieties. For a lighter version, opt for low-fat ingredients or substitute chicken with turkey or tofu.
