  • 2 cups rotini pasta Cook according to package instructions.

  • 1 cup cucumber, diced

For the Caesar Dressing

  • ½ cup mayonnaise

  • 1 tablespoon Worcestershire sauce

  • Salt and pepper, to taste

Instructions
 

Cooking the Pasta

  • Begin by bringing a large pot of salted water to a boil. Add the rotini pasta, and cook according to package instructions until al dente. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process.

Preparing the Chicken

  • If you are using raw chicken, season it with salt and pepper, then grill or sauté it in a skillet over medium heat for about 6-8 minutes on each side or until fully cooked and no longer pink inside. Allow it to cool slightly before dicing it into bite-sized pieces. If using rotisserie chicken, simply shred or dice the meat.

Making the Dressing

  • In a medium-sized bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, and minced garlic. Season with salt and pepper to taste. Adjust the acidity or creaminess by adding more lemon juice or mayonnaise as desired.

Combining the Ingredients

  • In a large mixing bowl, combine the cooked pasta, diced chicken, chopped romaine lettuce, halved cherry tomatoes, and diced cucumber. Pour the dressing over the salad mixture, and toss gently to ensure everything is evenly coated.

Finishing and Serving

  • Transfer the Chicken Caesar Pasta Salad to a serving bowl. Sprinkle the top with croutons and grated Parmesan cheese. Serve immediately or refrigerate for up to an hour to allow the flavors to meld.
