  • 2 pieces boneless, skinless chicken breasts (about 1 pound) Pound to an even thickness for even cooking.

  • 8 ounces fettuccine pasta
  • 1 cup heavy cream Can be substituted with half and half for a lower fat version.
  • 1 cup grated Parmesan cheese Use freshly grated for better texture and flavor.
  • 2 tablespoons fresh parsley, chopped For garnish.
  • Optional: paprika or Italian seasoning For added flavor.

Preparation

  • In a large pot, bring salted water to a rolling boil.
  • Add the fettuccine and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.
  • Before draining, reserve about 1 cup of the pasta cooking water. Drain the pasta and set it aside.

Cooking the Chicken

  • While the pasta cooks, season both sides of the chicken breasts with salt and pepper.
  • In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Allow it to heat until shimmering.
  • Place the seasoned chicken breasts in the skillet and cook for about 6-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F). Remove chicken from the skillet and let it rest for a few minutes before slicing it into strips.

Making the Alfredo Sauce

  • In the same skillet (keep it on medium heat), add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  • Gradually pour in the heavy cream, stirring gently, and allow the cream to come to a gentle simmer.
  • Stir in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. Season with salt, pepper, and optional spices if desired.

Combining Ingredients

  • Add the drained fettuccine to the sauce mixture, tossing to coat evenly.
  • Add the sliced chicken on top and toss gently to combine all elements, ensuring the chicken is evenly distributed.
  • Serve immediately, garnished with chopped parsley for a fresh finish.

Notes

Store leftover Garlic Chicken Alfredo in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop over low heat, adding a splash of reserved pasta water or cream as needed.
