Ingredients

  • 8 ounces rotini or penne pasta Use whole wheat or gluten-free pasta if desired.
  • 2 cups cooked chicken breast, shredded or diced Rotisserie chicken can be used for convenience.
  • 1 avocado, diced Ensure the avocado is perfectly ripe.
  • 3 cups Romaine lettuce, chopped Use fresh, high-quality romaine for best flavor.
  • ½ cup cherry tomatoes, halved
  • ¼ cup grated Parmesan cheese Keep fresh Parmesan for better taste.
  • 1 tablespoon olive oil Optional for drizzling on top.
  • Salt and pepper to taste

For the Caesar Dressing

  • ½ cup mayonnaise Substitute with Greek yogurt for a lighter option.
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon capers or anchovy paste (optional) For added flavor.

Instructions
 

Cook the Pasta

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once done, drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool.

Prepare the Chicken

  • If you haven't cooked your chicken yet, grill, bake, or boil it. Once it's cooked, shred or dice the chicken into bite-sized pieces. You can use rotisserie chicken for a quick option.

Make the Dressing

  • In a medium bowl, whisk together the mayonnaise, lemon juice, minced garlic, Worcestershire sauce, black pepper, and Parmesan cheese until smooth. If you’re using capers or anchovy paste, add them now as well. Taste and adjust seasoning as needed.

Combine the Ingredients

  • In a large mixing bowl, combine the cooked pasta, shredded chicken, diced avocado, chopped Romaine lettuce, and cherry tomatoes. Drizzle the dressing over the salad and toss gently to coat everything evenly without smashing the avocado.

Add the Finishing Touches

  • Sprinkle grated Parmesan cheese and freshly ground black pepper on top of the salad for extra flavor. Drizzle a little olive oil for added richness if desired.

Serve
