Ingredients
  

Pasta and Broth

  • 8 ounces 8 ounces of spaghetti or fettuccine pasta
  • 4 cups 4 cups of chicken or vegetable broth Use low-sodium if preferred.

Flavorings

  • 4 cloves 4 cloves of garlic, minced Use fresh garlic for the best flavor.
  • 1 cup 1 cup of grated parmesan cheese Use freshly grated for a richer taste.
  • 1 tablespoon 1 tablespoon olive oil
  • 1 teaspoon 1 teaspoon salt Adjust to taste.
  • ½ teaspoon ½ teaspoon black pepper
  • 1 teaspoon 1 teaspoon Italian seasoning (optional) Add for extra flavor.
  • 1 tablespoon Chopped parsley for garnish (optional) Adds freshness to the dish.

Instructions
 

Preparation

  • Gather all your ingredients. Mince the garlic and measure out the pasta, broth, cheese, and spices.

Cooking

  • In a large pot or a deep skillet over medium heat, add the tablespoon of olive oil. Heat the oil for about a minute until it shimmers but does not smoke.
  • Add the minced garlic to the pot and sauté for about 1-2 minutes, or until fragrant. Avoid browning the garlic.
  • Pour in the chicken or vegetable broth, bring to a boil, and add the uncooked pasta. Stir well.
  • Add the salt, black pepper, and Italian seasoning (if using). Stir to combine.
  • Reduce heat to medium-low, cover the pot, and let the pasta simmer for approximately 10-12 minutes, stirring occasionally until cooked al dente and broth is mostly absorbed.
  • Remove the pot from heat and stir in the grated parmesan cheese until it melts into a creamy sauce. Adjust seasoning if necessary.
  • Plate the pasta in bowls and garnish with chopped parsley if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of broth or water to regain creaminess. Customize with additional vegetables or protein as desired.
