Ingredients
  

For the Beef and Broccoli

  • 1 pound flank steak, sliced thinly against the grain For tenderness, freeze for 30 minutes before slicing.
  • 4 cups broccoli florets Chop into florets.
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil Drizzle at the end for flavor.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 tablespoon ginger, minced Fresh ginger is preferred.
  • 1/4 cup beef broth Use low-sodium if desired.
  • 1 tablespoon cornstarch Use for marinating and thickening the sauce.
  • 1 tablespoon soy sauce Use low-sodium for a lighter option.
  • 1 tablespoon oyster sauce Check for gluten-free options if needed.
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste

To Serve

  • Cooked white or brown rice For serving.
  • Toasted sesame seeds Optional garnish.

Instructions
 

Preparation

  • Slice the flank steak thinly against the grain for tenderness. Chop the broccoli into florets and mince the garlic and ginger.

Marinating

  • In a medium bowl, combine the sliced beef with soy sauce, cornstarch, and a pinch of salt and pepper. Let it marinate for at least 10 minutes.

Blanching Broccoli

  • Bring a pot of water to a boil and add the broccoli florets. Cook for 1-2 minutes until bright green and tender-crisp. Drain and immediately plunge into an ice bath.

Cooking

  • In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned.
  • Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  • Pour in the beef broth, oyster sauce, and rice vinegar. Let it simmer for about 2 minutes.
  • If desired, whisk in an additional teaspoon of cornstarch dissolved in water for a thicker sauce.
  • Add the blanched broccoli and toss until heated through and well-coated.

Finishing Touches

  • Drizzle sesame oil over the dish and stir well before serving.
  • Serve hot over cooked rice and garnish with toasted sesame seeds if desired.

Notes

For meal prep, this dish is excellent for portioning. Store in airtight containers for easy lunches. Can be doubled or tripled.
