Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

For the Base

  • 2 cups cauliflower rice (fresh or frozen)
  • 1 cup marinara sauce
  • 1 teaspoon red pepper flakes (optional)

Toppings

  • 1 cup shredded mozzarella cheese
  • 1/2 cup bell peppers, diced (any color)
  • 1/2 cup red onion, sliced
  • 1/2 cup black olives, sliced
  • Fresh basil leaves, for garnish

Instructions
 

Preparation

  • In a large bowl, mix the diced chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper. Ensure that each piece of chicken is evenly coated with the seasoning.

Cooking the Chicken

  • Heat a large skillet over medium heat. Add the seasoned chicken to the skillet. Sauté for about 7-10 minutes or until the chicken is cooked through and golden brown, stirring occasionally to ensure even cooking. Remove the chicken from the skillet and set aside.

Cooking the Cauliflower Rice

  • In the same skillet, add the cauliflower rice. Sauté for about 5-7 minutes until it becomes tender. You can add a splash of olive oil if needed. Season lightly with salt and pepper. Once cooked, push the cauliflower rice to one side of the skillet.

Combine Ingredients

  • Pour the marinara sauce into the skillet with the cauliflower rice. Stir gently to mix the sauce with the rice. Add the cooked chicken back into the skillet and mix until all ingredients are evenly distributed. If you like a bit of heat, sprinkle red pepper flakes into the mixture.

Add Toppings

  • Spread the mixture evenly in the skillet and top with shredded mozzarella, diced bell peppers, red onion, and black olives. Cover the skillet with a lid and let it cook for another 5 minutes over low heat, or until the cheese is melted and bubbly.

Serve

  • Once the cheese is melted, remove the skillet from heat. Scoop the Chicken Pizza Bowl into individual serving dishes and garnish with fresh basil leaves. Serve hot and enjoy!
