For the Peach Filling

  • 6 cups fresh peaches, peeled, pitted, and sliced (about 6-8 medium peaches) Look for ripe, fragrant peaches.
  • 3/4 cup granulated sugar Adjust based on sweetness preference.
  • 1 tablespoon cornstarch Helps to thicken the peach filling.
  • 1 teaspoon vanilla extract Adds flavor depth.
  • 1 teaspoon lemon juice Balances the sweetness of the peaches.
  • 1/2 teaspoon ground cinnamon Enhances flavor.
  • 1/4 teaspoon salt Balances sweetness.

For the Crisp Topping

  • 1 cup old-fashioned rolled oats Provides texture.
  • 1/2 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1/2 cup packed brown sugar Adds a rich sweetness.
  • 1/2 teaspoon ground cinnamon Further enhances flavor.
  • 1/4 teaspoon salt Balances sweetness.
  • 1/2 cup unsalted butter, melted Chill slightly for crunchier topping.

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). This ensures your crisp cooks evenly and allows the aromas to fill the kitchen.

Prepare the Peaches

  • In a large mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, vanilla extract, lemon juice, ground cinnamon, and salt. Toss everything together gently until the peaches are evenly coated.

Set Up the Baking Dish

  • Grease a 9x9-inch baking dish with a little butter or cooking spray. Spread the peach mixture evenly across the bottom of the dish.

Make the Crisp Topping

  • In a separate bowl, mix together the rolled oats, flour, brown sugar, ground cinnamon, and salt. Drizzle the melted butter over the oat mixture and combine until large crumbs form.

Combine and Bake

  • Evenly sprinkle the crisp topping over the peach filling in the baking dish. Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the peaches are bubbling.

Cool and Serve

  • Once baked, remove the Peach Crisp from the oven and allow it to cool for about 10-15 minutes. Serve warm on its own or with a scoop of vanilla ice cream.

Notes

Choose ripe peaches for the best flavor. Variations include using other fruits or adding nuts to the topping. Store leftovers in an airtight container for up to 2 days at room temperature or a week in the fridge.
