Ingredients

Main Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup salsa (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • to taste Fresh cilantro (for garnish, optional)
  • to taste Lime wedges (for serving)

Instructions

Preparation

  • Start by rinsing the chicken breasts under cold water and patting them dry with paper towels. Cut the chicken into bite-sized pieces for even cooking and better flavor absorption.

Seasoning

  • In a medium-sized bowl, combine the olive oil, garlic powder, cumin, chili powder, salt, and pepper. Toss the chicken pieces in this mixture to ensure they are evenly coated with the spices.

Cooking

  • Heat a non-stick skillet over medium heat. Once the skillet is hot, add the seasoned chicken and cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and fully cooked through.
  • Once the chicken is fully cooked, pour in the salsa and stir to combine. Reduce the heat to low and let it simmer for about 5-10 minutes.

Tortilla Preparation

  • While the chicken is simmering, heat the tortillas in a dry skillet or wrap them in foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes.

Assembly

  • To assemble the tacos, place a generous scoop of the salsa chicken mixture onto each tortilla. Add shredded lettuce, diced tomatoes, avocado, and a sprinkle of cheese on top.
  • Add fresh cilantro for an extra touch of flavor and serve with lime wedges on the side for squeezing over the tacos.

Notes

For perfect results, consider marinating the chicken in olive oil and spices for at least 30 minutes or overnight for even more flavor. Use homemade salsa for a fresher taste, and feel free to mix and match toppings for a personalized experience.
