For the Peach Filling

  • 6 cups fresh peaches, peeled and sliced Use ripe, fresh peaches for best flavor.
  • 1 cup granulated sugar, divided Adjust based on the ripeness of the peaches.
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract For the peach mixture

For the Batter

  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract For the batter

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the sliced peaches, 1/2 cup of granulated sugar, lemon juice, ground cinnamon, nutmeg, cornstarch, and 1 teaspoon of vanilla extract. Toss gently and let sit for about 10 minutes.

Make the Batter

  • In another bowl, whisk together the flour, baking powder, and salt. Add the melted butter, milk, and the additional teaspoon of vanilla extract. Stir until just combined.

Assemble and Bake

  • Pour the peach mixture into a greased 9x13-inch baking dish. Carefully dollop the batter over the peaches.
  • Sprinkle the remaining 1/2 cup of granulated sugar over the batter.
  • Place the baking dish in the preheated oven and bake for about 45 minutes.

Serve

  • Let the cobbler sit for about 10 minutes before serving.

Notes
