  • 4 pieces bone-in, skin-on chicken thighs (about 2 pounds) Juicy and flavorful.
  • Salt and pepper to taste For seasoning.

Garlic Butter Sauce

  • 4 tablespoons unsalted butter Rich flavor base.
  • 5 cloves garlic, minced For a punch of flavor.
  • 1 teaspoon dried thyme Or 1 tablespoon fresh thyme.
  • 1 teaspoon dried oregano Or 1 tablespoon fresh oregano.
  • 1 tablespoon olive oil For searing the chicken.
  • 1 Juice of 1 lemon Freshness and acidity.
  • Fresh parsley, chopped, for garnish Adds color and freshness.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.

Cooking the Chicken

  • In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for about 7-8 minutes.
  • Flip the chicken and sear the other side for an additional 4-5 minutes.

Making the Garlic Butter Sauce

  • Reduce the heat to medium and push the chicken to one side of the skillet. In the empty space, add the butter, minced garlic, thyme, and oregano. Stir together until the butter melts and garlic becomes fragrant.
  • Stir the melted garlic butter around the chicken thighs, coating them generously. Squeeze in the lemon juice and scrape brown bits from the bottom of the skillet.

Baking

  • Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the internal temperature reaches 165°F (75°C).

Serving

  • Allow the chicken to rest for a few minutes, then garnish with fresh parsley before serving.

Notes

Use a cast iron skillet for perfect searing, and let the chicken sit at room temperature for even cooking. Store leftovers in an airtight container for up to 3 days.
