Ingredients
  

For the Beef

  • 1 lb 1 lb (450g) ground beef (preferably lean)
  • 3 tablespoons 3 tablespoons soy sauce
  • 2 tablespoons 2 tablespoons brown sugar
  • 2 tablespoons 2 tablespoons sesame oil
  • 3 cloves 3 cloves garlic, minced
  • 1 teaspoon 1 teaspoon ginger, minced
  • 1 tablespoon 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon 1 tablespoon rice vinegar
  • 1 teaspoon 1 teaspoon sesame seeds

For the Bowl

  • 2 cups 2 cups cooked white or brown rice
  • 1 cup 1 cup carrots, julienned
  • 1 cup 1 cup cucumbers, thinly sliced
  • 1 cup 1 cup red cabbage, shredded
  • 4 pieces 4 green onions, sliced
  • 1 tablespoon 1 tablespoon sesame oil (for drizzling)
  • 1 handful 1 handful fresh cilantro leaves for garnish (optional)

Optional Toppings

  • Fried eggs (one per bowl)
  • Kimchi

Instructions
 

Preparation

  • In a large bowl, combine ground beef, soy sauce, brown sugar, sesame oil, minced garlic, minced ginger, gochujang, and rice vinegar. Mix everything well until the beef is fully coated in the marinade. Allow it to marinate for about 10 minutes while you prepare the other ingredients.
  • If you haven’t done so already, cook your rice according to package instructions. You can use leftover rice or microwave rice packets for convenience.

Cooking

  • Heat a large skillet over medium-high heat. Once hot, add the marinated beef mixture. Cook for about 7-10 minutes, breaking apart the meat with a spatula until it’s browned and cooked through. Make sure there’s no pink remaining. If desired, sprinkle the sesame seeds over the beef about a minute before it’s done cooking.
  • While the beef is cooking, prepare the vegetables by julienning carrots, slicing cucumbers, and shredding red cabbage.

Assembly

  • Divide the cooked rice among four bowls. Top each bowl with a generous serving of the beef mixture, then layer on the carrots, cucumbers, and red cabbage. Finish with a sprinkle of sliced green onions.
  • Drizzle some sesame oil over the bowls, garnish with fresh cilantro leaves if using, and add a fried egg or a side of kimchi if desired.

Serving

  • Serve your Korean Beef Bowls hot, and enjoy the fantastic medley of flavors and textures!

Notes

For an authentic taste, consider using ground brisket or sirloin instead of regular ground beef. Adjust the spiciness of the dish by modifying the amount of gochujang. You can make this dish vegetarian using tofu or tempeh as a substitute for beef.
