Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine minced garlic, lemon zest, lemon juice, olive oil, oregano, salt, black pepper, and red pepper flakes (if using). Mix well.
  • Add the chicken thighs to the marinade and coat evenly. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for best flavor).

Baking

  • Arrange the marinated chicken thighs skin-side up in a baking dish and pour remaining marinade over them.
  • Bake for 35-45 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  • Halfway through baking, spoon some juices over the chicken.
  • For crispy skin, broil for the last 3-5 minutes of baking.
  • Let the chicken rest for 5 minutes before serving, garnished with fresh parsley.

Notes

Use fresh ingredients for better flavor, and consider marinating overnight for enhanced taste. Adjust seasoning to preference, and feel free to add vegetables for a one-pan meal.
