Classic Eclair Cake

Ingredients
  

For the Cake

  • 2 packs 2 packs (14.4 oz each) graham crackers
  • 2 boxes 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 4 cups 4 cups whole milk Use whole milk for creaminess.
  • 8 oz 8 oz cream cheese, softened Make sure cream cheese is at room temperature.
  • 1 cup 1 cup powdered sugar Can be reduced for less sweetness.
  • 1 tablespoon 1 tablespoon vanilla extract
  • 1 cup 1 cup whipped topping (like Cool Whip)

For the Chocolate Ganache

  • 1 cup 1 cup semi-sweet chocolate chips
  • ½ cup ½ cup heavy cream Carefully measure for desired consistency.
  • 1 tablespoon 1 tablespoon butter Adds richness to the ganache.

Instructions
 

Prepare the Vanilla Pudding Mixture

  • In a large mixing bowl, whisk together the instant vanilla pudding mix and whole milk until well combined. Allow it to sit for about 5 minutes to thicken.

Combine with Cream Cheese

  • In another bowl, beat the softened cream cheese until smooth. Gradually mix in the powdered sugar and vanilla extract until fully incorporated.
  • Fold the prepared vanilla pudding into the cream cheese mixture gently, being careful not to deflate it. Finally, fold in the whipped topping until everything is blended.

Assemble the Cake

  • In a 9x13 inch baking dish, place a layer of graham crackers at the bottom to cover the surface.
  • Spread half of the pudding mixture over the graham crackers, smoothing it out with a spatula.
  • Add another layer of graham crackers on top, followed by the remaining pudding mixture. Finish with a final layer of graham crackers.

Make the Chocolate Ganache

  • In a small saucepan, heat the heavy cream over medium heat until it starts to simmer.
  • Remove from heat and add in the chocolate chips and butter, stirring until fully melted and smooth.

Top the Cake

  • Pour the chocolate ganache over the top layer of graham crackers and spread it evenly to the edges.

Chill and Set

  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for the best results.

Serve

  • Before serving, cut the cake into squares and enjoy.

Notes

Allow the cake to chill overnight for the best texture. Use full-fat ingredients for richer flavor. Avoid overmixing to maintain airy texture.
