  • 1 cup breadcrumbs (preferably whole wheat)
  • 1/2 cup finely chopped onion
  • 1/2 cup milk
  • 1/4 cup BBQ sauce (plus more for glazing)
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons minced garlic
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (for added flavor)
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Preparation

  • Preheat your oven to 350°F (175°C) to ensure even cooking.
  • Lightly grease a loaf pan or line it with parchment paper for easy removal.
  • In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, and minced garlic. Mix until just combined.
  • In a separate bowl, whisk together the milk, BBQ sauce, Worcestershire sauce, and eggs. Pour this mixture into the meat mixture and stir gently.
  • Sprinkle in the dried parsley, salt, black pepper, smoked paprika, and cayenne pepper. Mix gently until incorporated.
  • Transfer the meat mixture to the prepared loaf pan, shape it into a loaf, ensuring it is evenly distributed.
  • Spread a thin layer of BBQ sauce over the top of the meatloaf.
  • Bake for about 1 hour or until a meat thermometer reads 160°F (70°C).
  • Let the meatloaf rest for about 10 minutes before slicing.
  • Slice and serve with your favorite sides, drizzled with more BBQ sauce if desired.

For best results, choose a ground beef mixture with some fat, avoid overmixing, and let the meatloaf rest after baking for juiciness.
