Ingredients

Rice and Vegetables

  • 2 cups cooked white or brown rice Keep warm

  • 1 piece carrot, julienned

Instructions
 

Marinating

  • In a large bowl, combine the Hawaiian BBQ sauce and soy sauce. Add the chicken breasts, ensuring they are coated evenly. Cover the bowl and marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

Cooking Rice

  • If you haven't done so already, cook the rice according to package instructions, and keep it warm.

Cooking Chicken

  • Heat olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade (keeping the marinade for later) and season it lightly with salt and pepper.
  • Add the chicken to the skillet and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Adding Vegetables

  • Once the chicken is cooked, add the sliced red bell pepper, snap peas, and julienned carrot to the skillet. Sauté the vegetables for about 5 minutes until they begin to soften but remain crisp.

Combining Chicken and Sauce

  • Pour the reserved marinade over the chicken and vegetables in the skillet. Let it simmer for an additional 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken and veggies.

Assembling Bowls

  • To serve, portion the cooked rice into bowls. Top each bowl with the sautéed chicken and vegetable mixture, and then garnish with diced fresh pineapple and sliced green onions.
