Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract

Add-ins

  • 1 cup fresh or frozen cherries, pitted and chopped
  • 1/2 cup sliced almonds

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.

Mix the Dry Ingredients

  • In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Set this mixture aside.

Cream the Butter and Sugar

  • In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed. Continue beating until the mixture is light and fluffy, about 3-4 minutes.

Incorporate the Eggs and Extracts

  • Add the eggs, one at a time, mixing well after each addition. Then mix in the vanilla and almond extracts until fully combined.

Combine Wet and Dry Ingredients

  • Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just incorporated. Avoid overmixing to ensure a tender texture.

Fold in Cherries and Almonds

  • Gently fold the chopped cherries and sliced almonds into the batter using a spatula. This will help to distribute the fruit and nuts evenly throughout the bars.

Spread the Batter in the Pan

  • Pour the batter into the prepared baking pan, spreading it evenly across the surface with a spatula.

Bake the Bars

  • Bake the bars in the preheated oven for 25-30 minutes, or until they are lightly golden on top and a toothpick inserted in the center comes out clean.

Cool and Slice

  • Once baked, remove the pan from the oven and let it cool in the pan for 10 minutes. Once cool enough to handle, transfer the bars to a wire rack to cool completely before slicing them into squares.

Serve and Enjoy

  • Enjoy your Cherry Almond Bars at room temperature, or you can store them for later!

Notes

Choose quality cherries for the best flavor. Avoid overmixing to keep the bars soft and chewy. Use parchment paper for easy removal.
