  • 1 cup fresh or frozen blueberries
  • 1 cup fresh or frozen raspberries
  • 1 cup fresh or frozen blackberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For the Cobbler Topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F (190°C) for even cooking.

Prepare the Berry Filling

  • In a large mixing bowl, combine the strawberries, blueberries, raspberries, and blackberries.
  • Add in the granulated sugar, cornstarch, lemon juice, and 1 teaspoon of vanilla extract. Gently stir until all the berries are coated.
  • Transfer the mixed berries into a greased 9-inch square baking dish.

Make the Cobbler Topping

  • In another bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well-blended.
  • Pour in the milk and melted butter, then add the remaining teaspoon of vanilla extract. Mix until just combined.

Assemble the Cobbler

  • Spoon dollops of the cobbler topping over the berry filling, leaving some filling peeking through for a rustic look.

Bake the Cobbler

  • Place the baking dish in the preheated oven and bake for about 35 minutes, or until the topping is golden brown.
