  • Begin by gathering and prepping all your ingredients. Wash the cabbage leaves thoroughly and set them aside to dry. Ensure that your vegetables are chopped and ready to go, as this will make the cooking process swift and efficient.

Cooking the Filling

  • In a large skillet, heat the sesame oil over medium heat.
  • Add the finely chopped onion to the skillet and sauté for about 3-4 minutes until translucent.
  • Incorporate the minced garlic and ginger, cooking for an additional minute until fragrant.
  • Next, add the julienned carrot, sliced red bell pepper, and shiitake mushrooms. Cook for approximately 5 minutes, stirring occasionally until the vegetables begin to tenderize but still retain some crunch.
  • Stir in the cooked and shredded chicken (or tofu) along with the soy sauce, rice vinegar, sriracha, and sugar. Mix well, cooking for an additional 2-3 minutes to allow flavors to meld.
  • Taste your filling and season with salt and pepper as needed, adjusting the sriracha for spice preference.

Assembling the Tacos

  • While the filling is cooking, lightly steam the cabbage leaves for about 2-3 minutes to make them more pliable.
  • Lay a cabbage leaf flat in your hand, spoon a generous amount of filling into the center, fold the sides over the filling, and roll it up from the bottom to enclose the filling. Repeat with remaining leaves and filling.

Serving
