Ingredients
  

Meatloaf Base

  • 1.5 pounds ground beef Use 80/20 ground beef for best flavor and texture.
  • 1 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup milk Add more if the mix feels too dry.
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Glaze

  • 1 cup ketchup Can be substituted with BBQ sauce.
  • 0.25 cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard powder Optional.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix until just combined.
  • Transfer the mixture to a baking dish or loaf pan and shape it into a loaf.
  • In a separate bowl, combine ketchup, brown sugar, apple cider vinegar, and mustard powder to make the glaze.
  • Spread half of the glaze over the top of the meatloaf.

Cooking

  • Bake the meatloaf in the preheated oven for 1 hour. Brush remaining glaze halfway through baking.
  • Check for doneness with a meat thermometer to ensure it reaches an internal temperature of 160°F (70°C).

Serving

  • Remove from the oven and let rest for 10-15 minutes before slicing.
  • Serve with mashed potatoes and green beans or your favorite sides.

Notes

Letting the meatloaf rest before slicing greatly improves texture and juiciness. Consider adding herbs for flavor.
