  • 2 cups gnocchi (store-bought or homemade) Cook according to package instructions.

  • 1 tablespoon olive oil
  • Salt and black pepper, to taste Adjust seasoning as needed.
  • Grated Parmesan cheese, for serving Can substitute with nutritional yeast for a dairy-free option.
  • Fresh basil, for garnish (optional)

Instructions

Preparation

  • Gather all your ingredients to simplify the cooking process.

Cooking the Chicken

  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken pieces, seasoning with salt and pepper. Cook for about 5-7 minutes until browned and cooked through. Remove chicken and set aside.

Sauté Aromatics

  • In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute until fragrant.

Add the Tomatoes and Spinach

  • Add cherry tomatoes and cook for about 3 minutes until softened. Stir in fresh spinach, cooking until wilted for another 2 minutes.

Create the Sauce

  • Pour in chicken broth and heavy cream, then add dried Italian herbs. Stir well to combine and bring to a gentle simmer for about 5 minutes.

Cook the Gnocchi

  • Cook the gnocchi according to package instructions, usually boiling them in salted water for 2-3 minutes until they float. Drain and set aside.

Combine Everything

  • Once the sauce has thickened, return the cooked chicken to the skillet, followed by the gnocchi. Toss everything gently to coat in the creamy sauce. Adjust seasoning if necessary.

Serve

  • Remove from heat and serve hot, garnished with grated Parmesan cheese and fresh basil if desired.

Notes

Leftover Tuscan Chicken Gnocchi can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of chicken broth or cream to loosen the sauce.
