Ingredients
  

For the Chicken

  • 2 pounds boneless, skinless chicken breasts Use high-quality chicken for better flavor.
  • 1 cup BBQ sauce (your choice of flavor) Feel free to experiment with different BBQ sauces.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

For the Sliders

  • 12 pieces slider buns Consider toasting for extra crunch.
  • 1 cup coleslaw mix
  • ¼ cup mayonnaise Try Greek yogurt for a lighter option.
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Optional: sliced pickles or jalapeños for topping

Instructions
 

Cook the Chicken

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, season the boneless chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Place the chicken onto a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Shred the Chicken

  • Once cooked, remove the chicken from the oven and let it cool for a few minutes.
  • Using two forks, shred the chicken into bite-sized pieces in a large bowl.

Mix with BBQ Sauce

  • Pour the BBQ sauce over the shredded chicken and mix until evenly coated.
  • Taste for seasoning and adjust if necessary.

Prepare the Coleslaw

  • In a separate bowl, combine the coleslaw mix with mayonnaise, apple cider vinegar, and sugar.
  • Toss until well combined.

Assemble the Sliders

  • Take a slider bun and add a generous scoop of the BBQ chicken mixture.
  • Top with a spoonful of coleslaw.
  • If desired, add sliced pickles or jalapeños.
  • Place the top of the bun on each slider.

Serve

  • Arrange the sliders on a platter and serve warm.

Notes

Store leftover sliders in an airtight container in the fridge for up to 3 days. For longer storage, freeze the shredded BBQ chicken for up to 2 months. Reheat in the oven or microwave.
