Main Ingredients

  • 4 ripe peaches, sliced Choose slightly soft peaches for best flavor.
  • 8 ounces burrata cheese Quality burrata enhances flavor.
  • 4 cups arugula or mixed salad greens Fresh greens for a vibrant base.
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves Using fresh basil is key.
  • 1/4 cup walnuts or pecans, toasted Optional for added crunch.
  • 1/4 cup balsamic glaze A high-quality glaze works best.
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste Adjust seasoning as needed.

Instructions

Preparation

  • Start by washing the peaches and cherry tomatoes. Slice the peaches into wedges and halve the cherry tomatoes. Set aside.
  • If you’re using nuts, toast them in a dry skillet over medium heat for about 3-5 minutes until lightly browned and fragrant. Remove from heat and let cool.

Assembly

  • In a large salad bowl, place the arugula or mixed salad greens as the base.
  • Gently place the sliced peaches and halved cherry tomatoes on top of the greens.
  • Tear the burrata cheese into large pieces and arrange them artfully over the salad.
  • Scatter fresh basil leaves and the toasted nuts over the salad.
  • Drizzle balsamic glaze and olive oil over the salad. Season with salt and pepper to taste.
  • Toss gently to combine just before serving. Enjoy your vibrant salad right away!

Notes

Best enjoyed fresh. Assemble just before serving to prevent the greens from wilting. For variations, add grilled chicken or substitute nuts as desired.
