Ingredients
  

Main Ingredients

  • 4 pieces ripe peaches, halved and pitted Choose ripe peaches for optimal sweetness.
  • 8 ounces burrata cheese Handle gently and bring to room temperature before serving.
  • 5 ounces fresh arugula Can substitute with other greens if desired.
  • 1/4 cup balsamic glaze Homemade version can be made by simming balsamic vinegar.
  • 1/4 cup extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Optional Ingredients

  • 1/4 cup chopped fresh basil For garnish and additional flavor.
  • 1/4 cup toasted pine nuts or walnuts Adds crunch and enhances flavor.

Instructions
 

Preparation

  • Preheat your grill to medium heat (about 350°F to 400°F). If using a grill pan, place it over medium heat on the stove.
  • Halve the peaches and remove the pits. If desired, brush the cut sides lightly with olive oil.

Grilling

  • Place the peach halves cut-side down on the preheated grill. Grill for about 4-5 minutes, or until grill marks appear and they are tender.
  • Flip the peaches over and grill for an additional 2-3 minutes to heat through. Remove from the grill and let cool slightly.

Assembly

  • Arrange the fresh arugula on a large serving platter or individual plates.
  • Tear the burrata cheese into large pieces and place them on top of the arugula.
  • Arrange the grilled peaches around or on top of the arugula and burrata.
  • Drizzle generously with balsamic glaze and olive oil. Season with salt and pepper to taste.
  • If using, sprinkle basil and toasted nuts over the top.
  • Enjoy your salad immediately for the best taste and texture.

Notes

Best enjoyed fresh. Store components separately if leftovers exist. Reheat peaches gently to retain texture.
