For the Crust

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

For the Lemon Filling

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 large lemon zest Zest of 1 large lemon
  • 1/2 cup fresh lemon juice About 2-3 lemons
  • powdered sugar for dusting For serving

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
  • In a mixing bowl, combine flour, granulated sugar, softened butter, salt, and vanilla extract. Mix until crumbly.
  • Press the crust mixture into the bottom of the prepared baking dish and bake for 15 minutes until lightly golden.
  • Whisk together eggs in a mixing bowl. Add granulated sugar, flour, and baking powder, and mix until well combined.
  • Stir in lemon zest and fresh lemon juice until well incorporated.
  • Pour the lemon filling over the baked crust and return to the oven. Bake for an additional 15-20 minutes until set.
  • Allow the bars to cool in the pan on a wire rack. Refrigerate for at least an hour for a firmer texture before serving.
  • Dust the top with powdered sugar before serving.

Notes

Fresh lemon juice enhances flavor. Use room temperature ingredients for best texture. Chill before slicing for neat cuts.
