  • 3 cups pasta Use whole wheat or gluten-free pasta for a healthier option.
  • 1/2 cup pesto Consider making your own pesto for a fresher taste.
  • 2 cups spinach Fresh spinach is recommended, but frozen can be used if thawed and drained.
  • 1/2 cup parmesan cheese Feel free to sprinkle extra parmesan cheese on top when serving.

Preparation

  • Boil water in a large pot. Add pasta and cook according to package instructions until al dente. Drain and rinse with cold water.
  • In a mixing bowl, combine pesto and fresh spinach. Stir until well coated.
  • Sprinkle in parmesan cheese and mix everything together until well combined.
  • Cover the salad and refrigerate for at least 30 minutes to chill.

Notes

To store, place in an airtight container in the refrigerator for up to three days. If pasta absorbs too much sauce, add more pesto before serving. Variations can include roasted vegetables, lemon juice, or nuts.
