Ingredients

Main Ingredients

  • 1 lb ground beef Use lean ground beef to reduce grease.
  • 2 cups macaroni Whole grain macaroni can be used, may take longer to cook.
  • 2 cups broth Beef or vegetable broth can be used.
  • 1/2 cup ketchup Can be substituted with barbecue sauce for different flavor.
  • 1 cup cheese Adjust the amount based on your taste.

Instructions

Preparation

  • In a large pot, cook the ground beef over medium heat until it's brown. Drain any excess fat.
  • Add the macaroni and broth to the pot with the beef.
  • Bring the mixture to a simmer, cover, and cook until the macaroni is soft, about 8-10 minutes.
  • Stir in the ketchup and cheese, mixing well until the cheese is melted.

Notes

Serve hot, topped with extra cheese or chopped parsley. Pairs well with a simple salad or garlic bread. To store leftovers, let cool completely, refrigerate for up to 3 days, or freeze for up to a month. Thaw in the fridge overnight before reheating. For a vegetarian version, replace ground beef with lentils or plant-based meat substitute.
