  • 3 cups pasta Use any type of pasta, such as rotini, penne, or fusilli.
  • 1 avocado Use fresh to ensure creaminess and flavor.
  • 1/2 cup bacon Chopped, can use turkey bacon as a lighter option.
  • 1 cup tomato Chopped fresh tomatoes.
  • 1/2 cup mayo Greek yogurt can be used for a healthier version.

Preparation

  • Cook the pasta according to the package instructions until it is al dente. Drain and let it cool.
  • In a bowl, mash the avocado and mix it with the mayo until it's smooth.
  • Chop the bacon and tomatoes, then add them to the avocado mixture.
  • Combine the cooled pasta with the avocado, bacon, and tomato mixture. Stir everything gently.
  • Chill the salad in the fridge for at least 30 minutes before serving.

Notes

Serve cold, garnished with extra bacon bits or fresh herbs. Best eaten within two days if stored in an airtight container in the refrigerator. Consider adding avocado just before serving to prevent browning.
