Ingredients

Main Ingredients

  • 2 cups chicken (cooked and shredded)
  • 1 can white beans (drained and rinsed)
  • 2 cups broth (chicken or vegetable)
  • 1 cup cream cheese
  • 1 cup corn (canned or frozen)
  • 1 can green chiles (diced)

Instructions

Preparation

  • Add all the ingredients to a large pot.
  • Simmer the mixture on low heat for about 20 minutes, allowing the flavors to blend.
  • Stir thoroughly until the cream cheese is melted and the soup reaches a creamy consistency.

Serving

  • Serve hot, garnished with your favorite toppings if desired.

Notes

For added flavor, sauté some onions and garlic in the pot before adding the other ingredients. Adjust the spice level by adding more or fewer green chiles based on your preference. If you like a chunkier soup, reserve some of the chicken to add in after blending the cream cheese. To store leftovers, let the soup cool to room temperature and transfer it to an airtight container. Refrigerate for up to 3 days, or freeze for 2-3 months.
