  • 4 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 large lemon, juiced and zested
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Preparation

  • Preheat your oven to 375°F (190°C).
  • Pat the chicken thighs dry with paper towels.

Making the Marinade

  • In a small bowl, combine garlic, lemon juice, lemon zest, olive oil, thyme, rosemary, salt, black pepper, and red pepper flakes.
  • Mix well until all ingredients are thoroughly blended.

Marinating the Chicken

  • Place the chicken thighs in a large bowl or resealable bag.
  • Pour the marinade over the chicken, ensuring each piece is coated.
  • Marinate for at least 30 minutes, or refrigerate for up to 4 hours for maximum flavor.

Cooking

  • In a large Dutch oven over medium-high heat, add olive oil.
  • Carefully place the marinated chicken thighs skin-side down and sear for 5-7 minutes until golden.
  • Turn the chicken over and sear the other side for another 5 minutes.
  • Pour the chicken broth around the sides of the chicken.
  • Cover and bake in the oven for 40-45 minutes until internal temperature is 165°F (75°C).

Serving

  • Remove from the oven and let the chicken rest for 5 minutes.
  • Garnish with freshly chopped parsley before serving.

Notes

Use high-quality chicken for better flavor. Let the chicken rest after baking to ensure juiciness. Fresh or mixed herbs can enhance the flavor. Searing is important for a crispy texture.
