  • 1 whole whole chicken (3-4 lbs)
  • 1/2 cup unsalted butter, softened Use high-quality unsalted butter for best flavor.
  • 10 cloves garlic, minced
  • 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried) You can substitute with other herbs of choice.
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
  • 1 lemon, halved
  • Salt and pepper, to taste
  • 1 onion, quartered
  • 4 pieces carrots, cut into large pieces
  • 2 pieces potatoes, cut into wedges
  • 2 tablespoons olive oil

Optional Garnish

  • Fresh parsley, for garnish Adds color and freshness when serving.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Take the whole chicken out of the refrigerator and pat it dry with paper towels.
  • In a medium bowl, combine the softened butter, minced garlic, chopped rosemary, and thyme. Mix well.

Seasoning and Cooking

  • Loosen the skin of the chicken over the breasts and thighs. Spread half of the garlic butter mixture under the skin and rub the remaining butter all over the chicken.
  • Season the chicken with salt and pepper. Squeeze the juice from one half of the lemon over the chicken and tuck both lemon halves and the quartered onion inside the cavity.
  • In a large bowl, toss the carrots and potatoes with olive oil, salt, and pepper. Place them around the chicken in the roasting pan.
  • Place the chicken breast-side up on a rack in a roasting pan. Roast for approximately 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C).
  • Baste the chicken with the pan juices halfway through cooking.
  • Once cooked, let the chicken rest for 10-15 minutes before carving.
  • Carve the chicken and serve it alongside the roasted vegetables. Optional: Garnish with fresh parsley.

Notes

For extra juiciness, consider brining the chicken before cooking. Feel free to vary the types of vegetables used with the chicken.
