  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 each bell pepper, diced (any color)
  • 1 cup fresh asparagus, chopped
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups day-old crusty bread, cut into cubes
  • 1 cup grated Parmesan cheese
  • 0.5 cup fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken breasts and season with salt, pepper, and thyme. Sauté until golden on all sides and cooked through, about 8-10 minutes. Remove and set aside.
  • In the same skillet, add the onions and cook until softened, about 3-4 minutes. Add the minced garlic, bell pepper, and chopped asparagus, cooking for another 5 minutes or until tender. Stir in the halved cherry tomatoes.
  • Pour the heavy cream and chicken broth into the skillet. Bring to a gentle simmer and cook for about 5 minutes, stirring occasionally. Adjust seasoning if needed.
  • Return the cooked chicken to the skillet, stirring to combine. Remove from heat.
  • In a large mixing bowl, combine the bread cubes and half of the grated Parmesan cheese. Toss to mix.
  • Transfer the chicken and vegetable mixture into a greased baking dish (about 9×13 inches). Spread the bread and cheese topping evenly, then sprinkle the remaining Parmesan on top.

Baking

  • Place the baking dish in the preheated oven and bake for 25-30 minutes, until bubbly and golden brown.
  • Remove the gratin from the oven, let it rest for a few minutes, and garnish with fresh parsley before serving.

Notes

Use fresh ingredients for the best flavor. Customize your vegetables based on preference. For extra crunch, toast the bread cubes before adding. Consider different herbs for variety.
