Ingredients
  

For the filling

  • 2 cups apples, peeled, cored, and diced (about 3 medium apples) Choose a mix of sweet and tart apples.
  • 2 tablespoons granulated sugar Adjust based on apple sweetness.
  • 1 teaspoon cinnamon Adds warmth and flavor.
  • 1 tablespoon lemon juice Enhances flavor and prevents browning.
  • 1 tablespoon cornstarch Helps absorb moisture to prevent sogginess.
  • ½ teaspoon vanilla extract Adds depth to the filling.

For the pastry

  • 1 sheet puff pastry (thawed) Ensure it's cold but pliable.
  • 1 egg for egg wash Provides a golden color.
  • 1 tablespoon water Used for egg wash.
  • to taste Powdered sugar For dusting before serving.

Instructions
 

Preparation

  • In a medium bowl, combine the diced apples, granulated sugar, cinnamon, lemon juice, cornstarch, and vanilla extract. Mix until the apples are well coated. Set aside.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out any creases. Cut it into 12 equal squares, each measuring about 3 inches.

Assembly

  • Place a tablespoon of the apple filling in the center of each pastry square.
  • Fold each pastry square diagonally to form a triangle, press the edges together, and crimp with a fork.
  • Whisk together the egg and water for the egg wash and brush the tops of each turnover.

Baking

  • Place the turnovers on the prepared baking sheet, spacing them about an inch apart.
  • Bake in the preheated oven for 20-25 minutes or until they are golden brown and puffed.
  • Allow to cool on a wire rack for a few minutes before dusting with powdered sugar if desired.

Notes

For best results, choose a mix of sweet and tart apples. Chilling the pastry helps maintain its texture during baking. Experiment with spices like nutmeg or allspice for added flavor.
