  • 1 cup Italian bread crumbs
  • 1 cup grated Parmesan cheese
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • 0.5 cup milk
  • 1 can (14.5 oz) crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 0.25 cup fresh parsley, chopped (for garnish)
  • 0.5 cup diced bell peppers or carrots (optional) for added texture

Preparation

  • Preheat your oven to 350°F (175°C). This ensures that your meatloaf cooks evenly and thoroughly.
  • In a large mixing bowl, combine the ground beef, Italian bread crumbs, and grated Parmesan cheese.
  • Stir in the finely chopped onion and minced garlic. If using bell peppers or carrots, add them now.
  • Crack the eggs into the bowl and pour in the milk. Mix well until everything is combined, but avoid over mixing.
  • Add the crushed tomatoes, dried oregano, dried basil, salt, and black pepper. Gently fold the mixture until well integrated.
  • Transfer the meat mixture to a baking dish or lined loaf pan, shaping it into a loaf shape.
  • Sprinkle shredded mozzarella cheese over the top of the meatloaf.

Baking

  • Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  • Once baked, remove the meatloaf from the oven and let it rest for about 10-15 minutes. Garnish with fresh parsley before serving.

Use fresh ingredients for enhanced flavors. Avoid overmixing, and ensure to check the internal temperature for doneness. Allow to rest before slicing to retain juices.
