Ingredients
  

For the Meatloaf

  • 1.5 pounds ground beef (80/20 blend is recommended) Higher fat content for juiciness.
  • 1 cup breadcrumbs (preferably plain)
  • 1 cup onion, finely chopped
  • 0.5 cup milk Helps to keep the meatloaf moist.
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon smoked paprika

For the BBQ Glaze

  • 1 cup BBQ sauce (use your favorite brand)
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard (yellow or Dijon)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, milk, eggs, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and smoked paprika. Mix well until all ingredients are evenly combined.
  • Transfer the meat mixture to a lightly greased loaf pan or shape it into a loaf on a lined baking sheet, ensuring it is about 2 inches high for even cooking.

Making the BBQ Glaze

  • In a small bowl, whisk together the BBQ sauce, brown sugar, apple cider vinegar, and mustard until well blended. Reserve half of this glaze for later use.

Baking

  • Spread the remaining BBQ glaze generously over the top and sides of the meatloaf.
  • Place the meatloaf in the preheated oven and bake for 1 hour or until the internal temperature reaches 160°F (70°C). Check it early if your oven tends to run hot.
  • About 10 minutes before the meatloaf is done, brush the reserved BBQ glaze over the top for an extra layer of flavor.

Serving

  • Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving hot.

Notes

Use ground beef with at least 20% fat for juiciness; consider adding vegetables for extra flavor and moisture.
