Ingredients
  

For the Herb Pork Chops

  • 4 pieces bone-in pork chops, about 1 inch thick Bone-in pork chops are ideal for added flavor and moisture.
  • 2 tablespoons olive oil Used for searing the pork chops.
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped For garnish.

For the Fresh Slaw

  • 4 cups green cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 piece red bell pepper, sliced thin
  • 1/2 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped Optional.
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • to taste salt and pepper

Instructions
 

Preparation

  • Start by patting the pork chops dry with paper towels to ensure a nice sear.
  • In a small bowl, combine the garlic powder, onion powder, dried thyme, dried rosemary, salt, and black pepper. Rub this herb mixture all over the pork chops.
  • In a large skillet, heat the olive oil over medium-high heat until it begins to shimmer.
  • Add the seasoned pork chops to the skillet and sear them for about 5-6 minutes on each side, or until the internal temperature reaches 145°F (63°C).
  • Once cooked, remove the pork chops and cover them loosely with aluminum foil for about 5 minutes.

Fresh Slaw Preparation

  • In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced red bell pepper, and chopped green onions. Optionally, add chopped cilantro.
  • In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, and a sprinkle of salt and pepper. Adjust flavors as needed.
  • Pour the dressing over the slaw mixture and toss thoroughly to combine.

Serving

  • Serve the herb pork chops on a plate, topped with fresh parsley, alongside a generous helping of fresh slaw.

Notes

For best flavor, allow the pork to rest after cooking. Experiment with additional herbs and colorful vegetables in the slaw.
