Ingredients
  

For the Pork Chops

  • 4 pieces bone-in pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

For the Snap Pea Slaw

  • 2 cups sugar snap peas, trimmed and halved
  • 2 cups green cabbage, finely shredded
  • 1 cup colorful shredded carrots
  • ¼ cup fresh cilantro, chopped
  • ¼ cup green onions, sliced
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey

Preparation

  • Remove the pork chops from the refrigerator and let them sit at room temperature for about 10 minutes.
  • Pat them dry with paper towels, then season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.

Cooking the Pork Chops

  • In a large skillet, heat the olive oil over medium-high heat.
  • Place the seasoned pork chops in the skillet in a single layer and cook for about 4-5 minutes on one side.
  • Flip the chops and sear the other side for an additional 4-5 minutes until the internal temperature reaches 145°F (63°C).

Resting the Pork Chops

  • Remove the pork chops from the skillet and transfer them to a plate.
  • Cover lightly with aluminum foil and let them rest for about 5 minutes.

Preparing the Snap Pea Slaw

  • In a large bowl, combine the sugar snap peas, shredded cabbage, carrots, cilantro, and green onions.
  • In a separate small bowl, whisk together the rice vinegar, sesame oil, honey, and a pinch of salt and pepper.
  • Pour this dressing over the slaw and toss to combine thoroughly.

Serving

  • Plate the pork chops alongside a generous serving of the snap pea slaw.

Notes
