  • 4 pieces bone-in pork chops (about 1 inch thick) Bone-in pork chops are ideal for flavor and moisture.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth Use low-sodium for reduced salt intake.
  • 1 cup heavy cream Can be substituted with half-and-half or coconut milk.
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour Adjust for gravy thickness.
  • 1 tablespoon fresh parsley, chopped (for garnish) Optional, for garnish.

Instructions
 

Preparation

  • Pat the pork chops dry with paper towels and season both sides with salt, black pepper, garlic powder, and paprika.

Searing

  • In a large skillet, heat olive oil over medium-high heat. Sear the seasoned pork chops for about 5 minutes on each side until golden brown. Remove and set aside.

Sautéing

  • In the same skillet, add sliced onions and sauté until soft and translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

Making the Gravy

  • Sprinkle flour over the sautéed onions and garlic, stirring well to combine, and cook for about 2 minutes. Gradually pour in chicken broth, stirring constantly until it thickens.
  • Reduce heat to low, stir in heavy cream and Worcestershire sauce, and simmer for another 2-3 minutes.

Finishing

  • Return seared pork chops to the skillet, spooning some gravy over them. Cover and let simmer for about 20 minutes, turning halfway through.
  • Serve hot with the gravy spooned over the top and garnish with chopped parsley.

Notes

Allow pork chops to rest a few minutes after cooking to redistribute juices. Variations include adding herbs for flavor or adjusting fat content with different cream options. Serve with sides like mashed potatoes or rice.
