  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 2.5 cups chicken broth
  • 2 cups broccoli florets
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 0.5 cup grated Parmesan cheese (optional) For a creamy finish

Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat until shimmering.
  • Add the diced chicken breast to the pot. Season with salt, pepper, and smoked paprika. Sauté for about 5-7 minutes until browned and no longer pink.
  • Add the diced onion and cook for another 2-3 minutes until translucent, then stir in the minced garlic for an additional minute.
  • Pour in the rinsed rice and dried thyme, stirring well to combine and toast the rice slightly.
  • Carefully add chicken broth, bring to a boil, then reduce heat to low, cover and simmer for about 15 minutes.
  • After 15 minutes, scatter broccoli florets on top, cover again and cook for an additional 5 minutes.
  • Once the rice has absorbed all the liquid and broccoli is tender, remove from heat and stir in Parmesan cheese if using.
  • Fluff the rice with a fork, serve warm, and enjoy.

Notes

Cut chicken evenly for uniform cooking. Use fresh broccoli for the best texture. Adjust seasonings to taste. Let the dish rest covered for a few minutes after cooking.
