  • 2 pounds boneless skinless chicken breasts
  • 2 cups broccoli florets (fresh or frozen) Fresh preferred for best texture, but frozen works well
  • 1 cup long grain rice, uncooked Use long grain for optimal texture
  • 4 cups chicken broth Ensure gluten-free if needed
  • 1 can cream of chicken soup (10.5 ounces) Substitute with gluten-free versions if necessary

Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt Adjust to taste

Optional Toppings

  • 1 cup shredded cheddar cheese Optional, for a cheesy topping
  • Fresh parsley or green onions For garnish

Preparation

  • Begin by rinsing your chicken breasts under cold water. Pat them dry with paper towels and trim off any excess fat. Place the chicken in the bottom of your Crock-Pot.
  • Evenly sprinkle the uncooked long grain rice over the chicken in the Crock-Pot.
  • In a separate bowl, mix the chicken broth and cream of chicken soup until smooth. Pour this mixture over the chicken and rice, ensuring that everything is well covered.
  • Sprinkle the garlic powder, onion powder, paprika, black pepper, and salt over the top.
  • Gently layer the broccoli florets on top of the mixture.

Cooking

  • Place the lid on the Crock-Pot. Set it to cook on low for 4-6 hours or on high for 2-3 hours.
  • Once the cooking time is up, open the lid and check that the chicken is fully cooked (internal temperature should reach 165°F). Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot.
  • If using cheddar cheese, sprinkle it on top, and let it melt by mixing it into the dish. Stir everything to combine evenly.

Serving

  • Spoon portions of the mixture onto plates or into bowls and garnish with fresh parsley or green onions if desired.

Notes

Use fresh ingredients for best results. You can store leftovers in an airtight container for up to 4 days in the fridge.
