  • 1 lb asparagus, trimmed and cut into pieces
  • 1 leek, sliced (white and light green parts only)
  • 2 cups vegetable or chicken broth
  • 1 tbsp unsalted butter
  • Salt, to taste
  • Pepper, to taste

Instructions
 

  • In a medium pot, melt butter over medium heat
  • Add sliced leek, sauté 5 minutes until soft
  • Stir in asparagus and pour broth
  • Bring to gentle boil, then reduce to simmer
  • Cook 15 minutes until asparagus is tender
  • Blend with immersion blender until smooth
  • Season with salt, pepper, and optional lemon juice
