Ingredients
  

  • 2 cups cooked rice
  • 1 cup diced chicken
  • 3 cloves garlic (minced)
  • 1/2 cup peas & carrots
  • 2 eggs
  • 2 tbsp soy sauce
  • 1 tbsp oil
  • Green onions for garnish (optional)

Instructions
 

  • Heat the oil in a skillet or wok over medium heat until shimmering
  • Add minced garlic and sauté for 30 seconds until fragrant
  • Add diced chicken and peas & carrots, cook 3–4 minutes until chicken is fully cooked
  • Incorporate the rice and soy sauce, stir-fry 2–3 minutes to combine and heat through
  • Scramble eggs in a separate pan until just set, then fold into the rice mixture
  • Serve hot with optional green onion garnish

Notes

Use day-old rice for optimal texture; freshly cooked rice may clump
Add bell peppers, broccoli, or spinach for extra nutrition
Marinate chicken in soy sauce, garlic, and ginger 15 minutes for deeper flavor
Ensure skillet/wok is hot before cooking to enhance browning and prevent sticking
Optional: Add eggplant for a vegetarian twist (remove chicken and eggs)
