Ingredients
  

  • 4 boneless chicken breasts
  • 8 oz pasta (any type)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste

Instructions
 

  • Cook pasta according to package instructions; reserve 1/4 cup pasta water.
  • Season chicken with salt and pepper. Sear in a skillet over medium-high heat, 5-6 minutes per side. Remove chicken and set aside.
  • Sauté garlic in the same skillet until fragrant (30 seconds). Add heavy cream and whisk to combine.
  • Sprinkle in Parmesan cheese, stir until melted. Add spinach and cook until wilted (2 minutes).
  • Return chicken to the skillet. Cover and simmer sauce over chicken for 3 minutes.
  • Toss cooked pasta into the skillet with sauce. Add reserved pasta water as needed to reach desired consistency.
  • Serve hot.

Notes

Pound chicken breasts to equal thickness for even cooking.
Marinade suggestion: Olive oil, garlic, and herbs for 30 minutes.
Use low heat to prevent cream from curdling.
Optionally add crushed red pepper for spiciness.
Greek yogurt + chicken broth can substitute heavy cream for a lighter version.
Whole wheat or gluten-free pasta are viable alternatives.
