Ingredients
  

  • 2 mangoes, diced
  • 1 cup black beans, cooked
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste

Instructions
 

  • In a large mixing bowl, combine the diced mangoes, black beans, red bell pepper, red onion, and cilantro.
  • Squeeze the juice of one lime over the mixture, adding a pinch of salt.
  • Gently toss all the ingredients together until well mixed.
  • Cover and chill in the refrigerator for 10 minutes to meld flavors.
  • Serve with tortilla chips or as a topping for tacos.

Notes

Use ripe mangoes slightly yielding to pressure for optimal sweetness.
Rinse canned black beans to reduce sodium.
Add diced jalapeños for spiciness
