Ingredients
  

  • 1 zucchini, cut into rounds
  • 1 red bell pepper, cut into chunks
  • 1 yellow squash, cut into rounds
  • 2 tbsp balsamic glaze
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions
 

  • Begin by prepping your vegetables. Cut the zucchini, red bell pepper, and yellow squash into bite-sized pieces
  • In a large bowl, combine the diced vegetables with olive oil, balsamic glaze, salt, and pepper. Toss well to ensure all veggies are evenly coated
  • Preheat your grill to medium-high heat
  • While the grill is heating, thread the marinated vegetables onto skewers, alternating the types of vegetables for an appealing look
  • Once the grill is hot, place the veggie skewers on it. Grill for 10 to 12 minutes, turning occasionally, until the vegetables are tender and have nice grill marks
  • Remove the skewers from the grill, let them cool for a minute, and then serve immediately

Notes

Soak wooden skewers in water for about 30 minutes before grilling to prevent burning
Marinate the veggies for 30 minutes in the balsamic glaze and olive oil mixture before skewering for deeper flavor
Use alternative vegetables like cherry tomatoes, mushrooms, or additional bell peppers for variety
Leave spacing between skewered pieces for even cooking
