Ingredients

  • 1 lb chicken breast, diced
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced
  • 1/2 cup cream cheese, softened
  • 1 tsp chili powder
  • 1 tbsp olive oil

Instructions

  • Heat olive oil in a large skillet over medium heat. Cook diced chicken 5-7 minutes until browned and fully cooked, stirring occasionally.
  • Add sliced bell peppers and onion. Sauté 5 minutes until veggies are tender but crisp.
  • Stir in cream cheese and chili powder. Cook 2-3 minutes until the cheese melts into a creamy sauce.
  • Serve hot as is or with tortillas for a complete meal.

Notes

Add jalapeños or hot sauce for extra heat.
Let cream cheese soften to room temperature for smoother blending.
Cover skillet while sautéing veggies for softer results.
Marinate chicken in lime juice and spices for deeper flavor.
Store leftovers in an airtight container and refrigerate up to 3 days.
