Ingredients
  

  • 3 eggs
  • 2 slices turkey bacon
  • 2 tbsp milk
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped spinach
  • 1 tbsp butter
  • Salt & pepper to taste

  • Cook turkey bacon in a skillet over medium heat for 4–5 minutes per side until crispy
  • Remove bacon and set aside on a paper towel
  • In the same skillet, melt butter and sauté bell pepper and spinach until slightly tender
  • Whisk eggs with milk, salt, and pepper until frothy
  • Pour egg mixture into skillet and cook for 3–4 minutes, stirring gently to scramble
  • Crumble turkey bacon over eggs and mix briefly
  • Serve hot
