Ingredients
  

  • 2 salmon fillets (5-6 oz each)
  • 1 cup uncooked white rice
  • 1/2 cup edamame (fresh or frozen)
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Instructions
 

  • Cook rice according to package instructions (about 15 minutes)
  • Mix honey, soy sauce, and sesame oil to make teriyaki sauce
  • Heat skillet, add salmon skin-side down and sear 3-4 minutes per side
  • Steam edamame 3-5 minutes
  • Assemble bowl with rice, edamame, and salmon
  • Drizzle teriyaki sauce over the top

Notes

Do not overcook salmon for optimal texture
Use tamari for gluten-free version
Simmer sauce 2-3 minutes for thicker consistency
Add steamed broccoli or bell peppers for more veggies
