Ingredients
  

  • 1 cup lemon juice
  • 1/2 cup sugar
  • 4 cups water
  • 1 tsp dried lavender
  • Fresh mint leaves (to taste)
  • Ice (for serving)

Instructions
 

  • In a small saucepan, combine 1/2 cup sugar and 1 cup of water.
  • Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar has completely dissolved.
  • Once the sugar is dissolved, add 1 tsp of dried lavender to the saucepan.
  • Simmer for another 3-5 minutes, then remove from heat and let the syrup cool for about 10 minutes.
  • Strain the lavender syrup through a fine mesh sieve to remove the lavender flowers, discarding the solids.
  • In a large pitcher, mix together the strained lavender syrup, 1 cup of lemon juice, and 3 cups of cold water.
  • Add fresh mint leaves to taste, stirring gently to combine.
  • Serve over ice and garnish with additional mint leaves, if desired.

Notes

Choose culinary lavender for the best flavor in your syrup.
Let the lavender syrup cool completely before mixing with lemon juice to preserve freshness.
Adjust sugar amount to suit your taste or use honey/agave nectar as a substitute.
Muddle mint leaves for a stronger aromatic flavor if possible.
Store in an airtight container in the refrigerator for up to 3 days. Taste may dull over time; consider adding fresh mint leaves or a splash of cold water to revive it.
