Ingredients
  

  • 1 lb boneless, skinless chicken breast
  • 2 cans white beans (rinsed and drained)
  • 1 can green chilies (4 oz)
  • 1 cup low-sodium chicken broth
  • 1/2 cup sour cream
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • Optional garnishes: cilantro, avocado

Instructions
 

  • Cook and shred chicken using your preferred method (boil, sauté, or bake)
  • In a large pot, combine chicken, beans, green chilies, chicken broth, cumin, oregano, and salt
  • Bring to a simmer and cook 20 minutes
  • Stir in sour cream until smooth
  • Serve garnished with cilantro and/or avocado

Notes

Use rotisserie chicken to save time
Adjust heat level with jalapeños or hot sauce
Greek yogurt or dairy-free alternatives can replace sour cream
Store in airtight containers for 3 days refrigerated or 3 months frozen
Add corn or bell peppers for texture
